Chorizo and Black Bean Stew recipe

Black bean stew is a versatile, easy and deliciously hearty dish. This Chorizo and Black Bean Stew features the smoky flavors of chorizo sausage and ham and the sweetness of sauteed onions and sweet potatoes. Substitute any vegetables you like such as carrots, potatoes, okra or cabbage, or added shredded chicken and garnish with white cheese for a twist on this hearty and flavorful dish

Ingredients:

  • 1 Tbsp olive oil
  • ½ lb chorizo sausage, chopped
  • 1/3 lb ham, chopped
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 2 sweet potatoes
  • 1 large bell pepper, diced
  • 2 (14.5) oz can diced tomatoes
  • 4 c. chicken stock
  • 2 (16) oz cans black beans, rinsed and drained
  • 1 tsp cumin
  • ¼ c. fresh cilantro, roughly chopped
  • 1 bay leaf
  • 1 small hot green chili pepper, seeded and minced

Directions:

  1. Heat oil in a large pot over medium heat. Cook chorizo and ham 2-3 minutes until it begins to brown. Add onion and garlic and cook until tender and aromatic. Season with cumin and cook 1-2 minutes more.

  2. Add sweet potato, bell pepper, tomatoes, chili pepper and chicken broth. Bring to a boil, reduce heat to low and cover. simmer 15 minutes or until sweet potatoes are tender and easily pierced with a fork.

  3. Stir in beans and cook, uncovered 30 minutes or until mixture is heated through and reduced to desired thickness. Mix in cilantro and season with salt.

  4. Serve immediately, topped with fresh cheese if desired.
