Queso Fundido recipe
Queso fundido simply means “melted cheese” but this Mexican fondue dish is far from ordinary. Chorizo, white wine and three cheeses are simmered together to make a delectabel fondue that is bursting with taste. The smoky flavors of roasted garlic and picante sauce add a zesty kick to the mixture and the addition of goat cheese will make this Queso Fundido the hit of any part. Serve bubbling and hot with tortilla chips or warm tortillas for dipping.
Ingredients:
- 1 c. white wine
- 1 lb chorizo sausage, crumbled
- ½ onion, minced
- 4 cloves roasted garlic, smashed to a paste
- 1 (16 oz) jar picante sauce
- 1 c. Monterrey Jack cheese, grated
- 1 c. mozarella cheese, grated
- 1 c. goat cheese, crumbled
- chili powder to taste
Directions:
In large skillet cook chorizo until it begins to brown. Add onions and saute until aromatic and tender. Add garlic and picante sauce and cook 3-5 more minutes. Set aside.
Bring wine to a simmer in a double boiler. Add mozzarella cheese and Monterrey Jack cheese and stir until melted and creamy.
Add chorizo mixture and goat cheese. Cook 5 minutes more and season to taste with chili powder. Place in prepared fondue pot and serve with flour tortillas and blue corn chips.
