Chorizo and Beans recipe

The spicy and smoky flavors of chorizo sausage bring this bean dish to life!. Warm flour tortillas are topped with flavorful pinto beans and spicy chorizo for a hearty and healthy meal that takes just minutes to prepare. The flexibility of this dish makes it perfect for hectic households; use whatever spices strike your fancy or add shredded chicken, leftover pork and vegetables for added flavors.

Ingredients:

  • 2 Tbsp olive oil
  • 12 oz chorizo sausage
  • 1 large bell pepper, seeded and chopped
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • ½ tsp chipotle powder
  • 2 (28 oz) cans pinto beans with their liquid
  • ½ lb shredded cheddar cheese
  • ¼ lb queso fresco (mexican white cheese) crumbled
  • 1 (16 oz) container sour cream
  • 10 (12 in) flour tortillas

Directions:

  1. In large skillet heat oil over medium heat. Add onion, garlic, bell pepper and heat for 1 minute. Add chipotle powder and cumin and continue cooking over medium heat until onions are just softening.

  2. Add chorizo and cook until browned, about 5 minutes. Add beans and their juice to the mixture and bring to a simmer. Cook 20-30 minutes until warmed completely through and liquid has reduced.

  3. Prepare tortillas by warming in oven. Top tortillas with chorizo and bean mixture, sour cream, and cheese. Serve immediately.
